Sweet Potato Pancakes
I had this for breakfast this morning(along with fruit). I love these pancakes; they’re the perfect combination of complex carbs, protein and fats to refuel after an amazing workout and topped with all natural almond butter these will make your taste buds sing.
You will need:
1 small sweet potato,
2 organic free range eggs or 4 egg whites
1 tablespoon of coconut flour  (you can sub this with any flour of your choice or even protein powder)
Ground cinnamon and ground vanilla to taste
A little bit of water
Optional: stevia for extra sweetness
Prepare the sweet potato as you usually would (I like to steam or bake mine), then mash it up with a fork, add the remaining ingredients, mix well and cook in a non-stick pan with a little coconut oil on medium heat. Top with your topping of choice (highly recommend all natural almond butter) and enjoy. Have a lovely and healthy day guys.

Beetroot and Chocolate Cake.

  • Sift 50g cocoa powder with 175g plain flour and 1 1/2 tsp baking powder. Add 200g golden caster sugar.
  • Blitz 250g cooked beetroot with 3 eggs and 200ml of olive oil. Beat into dry ingredients.
  • Add 100g dark chocolate, finely chopped.
  • Cook at 180 degrees centigrade for 40-45 minutes.
  • Leave to cool, and then ice with 150g of icing sugar. Use beetroot juice instead of water to make purple icing.
Chocolate Orange Mousse.
Melt 50g of dark chocolate in a bowl over a pan of water. Add the zest of an orange.Whisk 3 egg whites to stiff peaks, add 1 1/2 tbsp caster sugar and whisk in.Carefully fold the egg whites into the chocolate. Pour into ramekins and refrigerate for at least an hour before serving. Garnish with chocolate shavings and orange zest. 3 pots= 125 calories each

Melt 50g of dark chocolate in a bowl over a pan of water. Add the zest of an orange.
Whisk 3 egg whites to stiff peaks, add 1 1/2 tbsp caster sugar and whisk in.
Carefully fold the egg whites into the chocolate. Pour into ramekins and refrigerate for at least an hour before serving. 
Garnish with chocolate shavings and orange zest. 

3 pots= 125 calories each
